Of
course, our main aim is to produce quality wines, but when the grapes have
been pressed we pay particular attention to the production of our marcs
which are collected and kept until their fermentation is ready for
distillation.
On
30 December 2002 the truck of the best distillery in Alsace drove
into the courtyard with its alembics.
Then
one by one the marcs from the different grape varieties gave off
their heady perfumes at this festive time.
The
